READY RITAS™ MARGARITA CUPCAKES

Cupcake Ingredients
• 1 box of yellow or white cake mix of your choice
• Ready Ritas Margarita Mix (any color)
• Additional ingredients listed on cake mix box (eggs, oil, etc.)
• Green food coloring, if desired

Frosting Ingredients
• 4 cups powdered sugar
• 1/3 cup butter or margarine, softened
• 2 tablespoons Ready Ritas Margarita Mix (any color; the color of mix will not change the color of the frosting)
• 1 tablespoon tequila*
• 1 teaspoon grated lime peel
• Green food coloring, if desired
* For nonalcoholic frosting, omit the tequila and increase the amount of Ready Ritas Margarita Mix to a total of 3 tablespoons.

Garnish
• Fresh lime slices or lime-flavored gummy candy slices

Directions
• Heat oven to 350°F (325°F for dark or nonstick pans). Place a paper baking cup in each of the 24 regular-sized muffin cups.
• Prepare the cake mix as directed on the box, substituting Ready Ritas Margarita Mix for the water. Add food coloring if desired.
• Divide batter evenly among muffin cups.
• Bake 18 to 22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes.
• Prepare frosting. Combine powdered sugar and softened butter or margarine in a large mixing bowl. Add food coloring if desired. Blend with an electric mixer until smooth and well mixed. Add Ready Ritas Margarita Mix and tequila. Mix well. Add grated lime peel.
• Frost cooled cupcakes. Garnish with fresh lime slices or lime-flavored gummy candy slices.
